Dark Chocolate Cashew Clusters

Crunchy cashews, rich dark chocolate, and a sprinkle of sea salt — these bite-sized clusters are proof that the simplest treats can be the most irresistible. Perfect for healthy snacking!

Ingredients:
  • 1 cup unsalted roasted cashews
  • 6 ounces dark chocolate (60-70%), chopped
  • Pinch of flaky sea salt
Directions:
  1. Prep the cups: Line a 24-cup mini muffin tin with liners. Divide the cashews evenly among the cups — about 4 cashews in each.
  2. Melt the chocolate: Place the chopped chocolate in a microwave-safe bowl. Microwave on medium power for 1 minute, stir, then continue microwaving in 20-second intervals, stirring each time, until smooth and fully melted.
  3. Assemble the clusters: Spoon about 1 teaspoon of melted chocolate over each cup of cashews, making sure they’re nicely coated.
  4. Finish with flair: Lightly sprinkle flaky sea salt on top of each cluster.
  5. Chill and set: Pop the tray into the refrigerator for about 30 minutes, or until the chocolate is firm.
Tips & Variations:
  • Swap cashews for almonds, pecans, or a mix of nuts for a different twist.
  • Add a sprinkle of shredded coconut or a drizzle of white chocolate for extra flair.
  • Store in an airtight container in the fridge for up to a week (if they last that long!).
