Ingredients:
1 oz (about 3 squares) 85% dark chocolate, broken into small pieces
⅔ cup low-fat yogurt
1 small orange
A few mint leaves (for garnish)
Directions:
- Melt the chocolate in short bursts in the microwave, stirring in between, or use a heatproof bowl over a pan of simmering water (making sure the bowl doesn’t touch the water). Let it cool slightly, then stir in a little yogurt.
- Finely grate the zest from half the orange. Peel the orange, remove the white pith, and chop the segments. No need to remove the membrane unless it’s tough.
- Stir the remaining yogurt into the chocolate mixture, then mix in the orange zest. Divide the chopped orange between two small serving glasses, then spoon the chocolate-yogurt mixture on top. Refrigerate for up to 3 days. Garnish with mint leaves before serving.
