Ingredients: (yields about 3 servings)
  • ½ pound lean ground beef
  • 1 cup tomato sauce (about half of a 15-ounce can)
  • 1 cup kidney beans, drained (about half of a 15-ounce can)
  • 1 cup chili beans, not drained (about half of a 15-ounce can)
  • 1 tablespoon chili powder, or to taste
  • Salt and freshly ground black pepper, to taste

Directions:
  1. Heat a large skillet over medium-high heat. Add the ground beef and cook, stirring often, until browned and crumbly, 5–7 minutes.
  2. Stir in the tomato sauce, kidney beans, and chili beans. Bring the mixture to a boil.
  3. Add chili powder and reduce the heat to low. Simmer, stirring occasionally, until the chili thickens, about 15 minutes.
  4. Taste and season with salt and black pepper as needed.
  5. Serve warm with crackers, cornbread, or a sprinkle of shredded cheese.
