- 8 oz dried soba noodles
- 1 cup water
- 1 tsp dashi powder (or 1 cup of prepared dashi stock)
- ¼ cup light soy sauce
- ¼ cup mirin
- 1 tbsp sugar
- 3 scallions, chopped
- Sesame seeds
- Grated radish
- Grated wasabi
- Thin strips of nori (seaweed)
- Make the Dipping Sauce: In a small saucepan, combine water, dashi powder, soy sauce, mirin, and sugar. Bring to a boil, then remove from heat. Chill in the fridge or place in an ice bath until completely cool.
- Cook the Noodles: Prepare soba noodles according to the package. Rinse well under cold water or dip in an ice bath to stop cooking and remove starch.
- Time to Dip & Enjoy: Serve noodles with dipping sauce on the side. Add garnishes like scallions, sesame seeds, or grated radish if you like!
