Easy Cold Soba Noodles

Ingredients:
  • 8 oz dried soba noodles
  • 1 cup water
  • 1 tsp dashi powder (or 1 cup of prepared dashi stock)
  • ¼ cup light soy sauce
  • ¼ cup mirin
  • 1 tbsp sugar
Optional Garnishes:
  • 3 scallions, chopped
  • Sesame seeds
  • Grated radish
  • Grated wasabi
  • Thin strips of nori (seaweed)
Instructions:
  1. Make the Dipping Sauce: In a small saucepan, combine water, dashi powder, soy sauce, mirin, and sugar. Bring to a boil, then remove from heat. Chill in the fridge or place in an ice bath until completely cool.
  2. Cook the Noodles: Prepare soba noodles according to the package. Rinse well under cold water or dip in an ice bath to stop cooking and remove starch.
  3. Time to Dip & Enjoy: Serve noodles with dipping sauce on the side. Add garnishes like scallions, sesame seeds, or grated radish if you like!

Tips:
  • Rinsing the noodles in cold water is key—it keeps them from turning gummy and helps them stay cool.
  • The dipping sauce (called Tsuyu) can be stored in the fridge for up to a week.
  • Leftover noodles? Best to enjoy fresh—stored ones tend to clump.
