Easy White Chicken Chili

Cozy, creamy, and ready in under half an hour—this white chicken chili is the kind of comfort food that makes chilly nights feel a little warmer. With tender chicken, mild green chiles, and hearty beans, it’s the perfect one-pot dinner when you want big flavor without the fuss.

Ingredients:
  • 1 tablespoon vegetable oil
  • 1 pound lean ground chicken
  • 1 medium onion, chopped
  • 2 cans (15 ounces each) cannellini beans, rinsed and drained
  • 1 can (4 ounces) chopped green chiles
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon pepper
  • 1 can (14-1/2 ounces) reduced-sodium chicken broth
  • Optional toppings: Reduced-fat sour cream, shredded cheddar cheese, chopped fresh cilantro

Directions:

  1. Heat oil in a large pan over medium-high heat. Add the chicken and onion; cook for 6–8 minutes, breaking up the meat as it browns, until the chicken is no longer pink.
  2. In a small bowl, mash one can of beans with a fork.
  3. Stir the mashed beans, remaining beans, green chiles, cumin, oregano, pepper, and chicken broth into the pan. Bring to a boil.
  4. Reduce heat, cover, and simmer for 12–15 minutes, until the flavors come together.
  5. Serve warm, topped with a dollop of sour cream, a sprinkle of cheese, and a little cilantro if you’d like.

Tip: It’s just as delicious the next day—perfect for quick lunches or freezing for later.
