Ingredients:
- 1 tablespoon vegetable oil
- 1 pound lean ground chicken
- 1 medium onion, chopped
- 2 cans (15 ounces each) cannellini beans, rinsed and drained
- 1 can (4 ounces) chopped green chiles
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon pepper
- 1 can (14-1/2 ounces) reduced-sodium chicken broth
- Optional toppings: Reduced-fat sour cream, shredded cheddar cheese, chopped fresh cilantro
Directions:
- Heat oil in a large pan over medium-high heat. Add the chicken and onion; cook for 6–8 minutes, breaking up the meat as it browns, until the chicken is no longer pink.
- In a small bowl, mash one can of beans with a fork.
- Stir the mashed beans, remaining beans, green chiles, cumin, oregano, pepper, and chicken broth into the pan. Bring to a boil.
- Reduce heat, cover, and simmer for 12–15 minutes, until the flavors come together.
- Serve warm, topped with a dollop of sour cream, a sprinkle of cheese, and a little cilantro if you’d like.
