Eggnog Cookies with Icing

Ingredients:​

For the Cookies:
1 cup butter, softened
2 cups sugar
1 cup eggnog
5-1/2 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon ground nutmeg

For the Icing:
1/4 cup butter, softened
3 cups confectioners' sugar
1/3 cup eggnog

Method:​

  1. Prepare the Dough: In a large bowl, cream the softened butter and sugar together until light and fluffy, about 5-7 minutes. Gradually mix in the eggnog. In a separate bowl, combine the flour, baking soda, and nutmeg. Slowly add this mixture to the creamed butter and sugar, mixing well until fully combined.
  2. Shape and Chill: Divide the dough into four portions and shape each into a 10-inch roll. Wrap each roll in waxed paper and refrigerate overnight.
  3. Bake the Cookies: Preheat your oven to 375°F (190°C). Unwrap the dough and slice it into 1/4-inch rounds. Place the slices 1 inch apart on ungreased baking sheets. Bake for 8-10 minutes, or until set. Remove from the oven and let cool on wire racks.
  4. Make the Icing: In a large bowl, beat the softened butter until fluffy. Gradually add the confectioners' sugar and eggnog, mixing until smooth.
  5. Frost the Cookies: Once the cookies have cooled, frost them with the icing. Store the cookies in an airtight container to keep them fresh.
