Emergency EASY Parmesan-Crumbed Fish

Need a fast, no-fuss fish dinner with big flavor? This “emergency” weeknight hero gives you juicy fillets under a crunchy, garlicky parmesan crumb—no messy dredging and on the table in about 10 minutes. Broiler for speed, or oven if you prefer. 🐟✨

Ingredients:
Fish & Glue

  • 2 firm white fish fillets (about 150g / 5 oz each), skin off, at room temp
  • 2 tbsp Dijon mustard (or mayo)
  • Olive oil spray
  • Salt & pepper
Parmesan-Garlic Crumb
  • ½ cup panko breadcrumbs
  • ⅓ cup (30g) parmesan, finely grated
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • 1 tbsp parsley, finely chopped (optional)
  • Pinch of salt
Directions:
  1. Preheat broiler on high; place an oven-safe skillet on the stove over high heat to preheat.
  2. Mix Crumb ingredients in a bowl.
  3. Season fish with salt and pepper; spread Dijon on the top of each fillet.
  4. Press mustard-side into the crumb to coat. Spray lightly with oil.
  5. Drizzle ½ tbsp oil in the hot skillet, lay in the fillets, then move skillet under the broiler about 15 cm / 5" from heat.
  6. Broil 5–6 minutes (for ~2 cm / ¾" thick fillets) until crumb is golden and fish flakes in the center. Serve with lemon.
