Fruit Pizza

Ingredients:

Crust​

  • 1 cup real butter 2 sticks, or 8 oz
  • 1 cup white sugar
  • 1 egg large or extra large
  • 1 teaspoon almond extract
  • 3 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon table salt
  • Zest of 1 orange

Creamy Topping​

  • 8 ounces package cream cheese
  • ¼ cup brown sugar
  • ½ teaspoon orange extract
  • 1 cup whipping cream
  • ½ cup powdered sugar

Fruit Topping​

  • 1 pint strawberries washed, hulled, sliced, and patted dry
  • 1 pint blueberries washed and patted dry
  • ½ cup dark or semi-sweet chocolate chips (optional)
Method:
  1. Cream the butter and sugar together until light and fluffy (about 2 minutes). Mix in the egg and extract until well incorporated.
  2. In another bowl, whisk together the flour, baking powder, and salt.
  3. Gradually add the dry ingredients to the butter mixture, mixing until fully combined. Stir in the orange zest.
  4. Shape the dough into a ball, then flatten it into a circle on parchment paper the size of a half-sheet pan. Roll and press the dough to about ⅓ inch thickness, creating decorative edges if desired. Transfer the parchment with the dough onto a baking sheet, cover with plastic wrap, and refrigerate for at least an hour.
  5. Preheat your oven to 350°F. Bake the crust for 18-25 minutes, until the edges turn golden and the center is set but still soft. For a crisper crust, bake longer. Let the crust cool completely.
  6. Once cooled, whip the cream cheese, orange extract, and brown sugar together until fluffy. In a separate bowl, whip the cream and powdered sugar to medium-stiff peaks. Fold the whipped cream into the cream cheese mixture until combined.
  7. Spread the cream cheese topping evenly over the cooled crust (you may have extra topping—perfect for dipping fruit or crackers!). Arrange the fruit decoratively on top.
  8. To drizzle chocolate, melt the chocolate chips in a microwave-safe bag in 20-second intervals, kneading until smooth. Snip a small corner of the bag and drizzle the chocolate over the fruit pizza. Refrigerate until serving.
Notes: Properly measure your flour to avoid a dry dough. For accuracy, use a food scale. If using measuring cups, fluff the flour first, spoon it lightly into the cup, and level with a knife.
