- 8 bone-in, skin-on chicken thighs (about 5 oz each)
- Salt and black pepper, to taste
- 3 tablespoons unsalted butter, divided
- 4 cloves garlic, minced
- ¼ cup packed brown sugar
- 1 tablespoon honey
- ½ teaspoon dried oregano
- ¼ teaspoon dried thyme
- ¼ teaspoon dried basil
- Prepare the chicken: Preheat the oven to 400°F (200°C). Pat the chicken dry and season with salt and black pepper.
- Sear for flavor: Melt 2 tablespoons of butter in a large oven-safe skillet over medium-high heat. Place the chicken skin-side down and cook for 2-3 minutes per side, until the skin turns golden and crisp. Transfer to a plate.
- Create the glaze: In the same skillet, melt the remaining 1 tablespoon of butter. Add the minced garlic and sauté until fragrant, about 30 seconds. Stir in the brown sugar, honey, oregano, thyme, and basil, mixing well.
- Bake to perfection: Return the chicken to the skillet, skin-side up, and spoon some of the glaze over each piece. Transfer the skillet to the oven and roast for 25-40 minutes, until the chicken reaches an internal temperature of 165°F (74°C).
