Grandma's Chicken Chardon

Ingredients:
  • 1 egg
  • 2 teaspoons garlic powder, divided
  • salt and ground black pepper to taste
  • 1 cup bread crumbs
  • ½ cup grated Parmesan cheese
  • ¼ cup unsalted butter, melted
  • 1 tablespoon fresh lemon juice
  • 1 pound sliced fresh mushrooms
  • 8 skinless, boneless chicken breasts
  • 1 teaspoon chopped fresh parsley
Method:
  1. Set the oven to 375°F and let it preheat.
  2. In a shallow bowl, whisk the egg with 1 teaspoon of garlic powder, salt, and black pepper. In a separate bowl, mix the bread crumbs, Parmesan cheese, and the remaining teaspoon of garlic powder. Set both aside.
  3. Stir melted butter and lemon juice together, then pour about two-thirds of the mixture into a 9x13-inch baking dish, tilting to coat the bottom evenly. Arrange the mushrooms in a single layer. Dip the chicken breasts into the egg mixture, allowing any excess to drip off, then coat them with the bread crumb mixture. Place the coated chicken over the mushrooms and drizzle the remaining butter mixture on top. Finish by sprinkling with parsley.
  4. Bake for approximately 45 minutes, or until the chicken is golden brown and its juices run clear.
