Grilled Pineapple Lime Chicken Thighs

This juicy and tangy twist to ordinary chicken brings tropical sunshine to your dinner plate.

Ingredients:
  • 1/2 cup pineapple juice
  • 2 limes, divided
  • 1 1/2 tablespoons olive oil
  • 1 1/2 teaspoon salt-free adobo seasoning
  • 1 teaspoon salt, or to taste
  • 1/8 teaspoon cayenne pepper, or to taste (optional)
  • 1 1/2 pounds skinless, boneless chicken thighs
  • 1/2 cup small pineapple pieces
  • cilantro sprigs, for garnish (optional)
Method:

Marinade Preparation

In a large resealable plastic bag, mix together pineapple juice, the zest and juice of one lime, olive oil, adobo seasoning, salt, and cayenne. Lightly squeeze the bag to blend the marinade well.

Marinating the Chicken

Add the chicken thighs to the bag and gently massage to coat them evenly. Arrange the thighs in a single layer, press out excess air, seal the bag, and refrigerate for 1 to 2 hours, turning occasionally (about every 20 minutes).

Note: Avoid marinating longer than 2 hours, as the acidity from pineapple and lime can alter the meat’s texture.

Grilling the Chicken

  1. Preheat an outdoor grill to 400°F (200°C). Clean and lightly oil the grates.
  2. Place the chicken on the grill and drizzle with some reserved marinade.
  3. Grill for 2–3 minutes, then rotate each piece 90 degrees for even grill marks. Cook another 2–3 minutes.
  4. Flip the chicken and repeat the process, grilling until fully cooked (internal temperature reaches 165°F / 74°C) and juices run clear.

Serving:

Transfer the chicken to a plate, tent with foil, and let rest for 8–10 minutes. Squeeze half of another lime over the chicken, then slice the remaining half for garnish. Top with pineapple pieces, lime slices, and fresh cilantro.
