Who says grilling is just for burgers and hot dogs? These Grilled Tofu Skewers with Sriracha Sauce bring smoky char, bold spice, and plenty of fresh veggies to your plate—perfect for a light summer supper or to wow guests at your next cookout.

- 1 (8-ounce) container extra-firm tofu, drained and cut into large chunks
- 10 large mushrooms
- 1 zucchini, cut into large chunks
- 1 red bell pepper, cut into large chunks
- ¼ cup soy sauce
- ¼ cup diced onion
- 2 tablespoons Sriracha sauce
- 2 tablespoons sesame oil
- 1 jalapeño, diced
- Ground black pepper, to taste
- In a large bowl, combine tofu, mushrooms, zucchini, and bell pepper.
- In a small bowl, mix soy sauce, onion, Sriracha, sesame oil, jalapeño, and black pepper. Pour over the tofu and vegetables; toss gently to coat. Cover and refrigerate for at least 1 hour to marinate.
- Preheat an outdoor grill to medium-high heat and lightly oil the grate.
- Thread tofu and veggies onto skewers, reserving the marinade.
- Grill skewers for about 10 minutes, turning occasionally, until lightly charred and cooked to your liking.
- Serve with the reserved marinade as a dipping sauce.
