Ground Turkey Fajita Bowls

This skillet meal brings all the sizzle of fajitas into a hearty grain bowl—without the fuss. Juicy ground turkey gets a flavor boost from chili powder and cumin, while bell peppers and brown rice make it both colorful and satisfying. Topped with cheddar and avocado, it's a fresh take on a weeknight favorite.

Ingredients (serves 4):
  • 1 tablespoon extra-virgin olive oil
  • 1 medium yellow onion, chopped
  • 1 medium red bell pepper, chopped
  • 1 medium yellow bell pepper, chopped
  • 1 pound ground turkey
  • 1 tablespoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper
  • 2 cups cooked brown rice
  • 1 cup shredded cheddar cheese
  • 1 avocado, diced
Directions:
  1. Heat oil in a large skillet over medium heat. Add onion and bell peppers; cook until slightly softened, about 4 minutes.
  2. Add ground turkey and cook, breaking it up, until no longer pink—about 5–6 minutes.
  3. Stir in chili powder, cumin, salt, and pepper. Cook for 2 more minutes to blend the flavors.
  4. To serve, divide brown rice among 4 bowls. Top with turkey mixture, cheddar cheese, and diced avocado.
