Healthy Ground Turkey Enchiladas

Ingredients:
  • 1 lb ground turkey
  • 1 cup yellow onion, diced
  • 2 garlic cloves, minced
  • 8 almond flour tortillas (or your favorite corn tortillas)
  • 1 cup refried beans
  • 1 jar (15 oz) red enchilada sauce
  • ½ cup beef broth
  • 3 tbsp tomato sauce
  • 1¾ cups shredded Mexican cheese
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp cumin
  • 1 tsp sea salt
  • Dash of pepper and cayenne
  • Optional: fresh cilantro, green onion, plain Greek yogurt
Directions:
  1. Preheat oven to 375°F.
  2. In a pan, sauté olive oil, garlic, and onion.
  3. Add ground turkey and season with chili powder, paprika, cumin, garlic powder, salt, pepper, and cayenne.
  4. Stir in tomato sauce and beef broth. Let simmer until thickened.
  5. Warm refried beans over low heat.
  6. Lay out tortillas. Fill each with beans, turkey, and cheese. Roll tightly.
  7. In a casserole dish, spread ½ cup enchilada sauce on the bottom. Place filled tortillas seam-side down.
  8. Top with remaining sauce and cheese. Bake for 20 minutes.
  9. Garnish with cilantro, green onion, or a spoonful of Greek yogurt.
