- 1 lb ground turkey
- 1 cup yellow onion, diced
- 2 garlic cloves, minced
- 8 almond flour tortillas (or your favorite corn tortillas)
- 1 cup refried beans
- 1 jar (15 oz) red enchilada sauce
- ½ cup beef broth
- 3 tbsp tomato sauce
- 1¾ cups shredded Mexican cheese
- 1 tbsp olive oil
- 1 tsp chili powder
- ½ tsp paprika
- ½ tsp garlic powder
- ½ tsp cumin
- 1 tsp sea salt
- Dash of pepper and cayenne
- Optional: fresh cilantro, green onion, plain Greek yogurt
- Preheat oven to 375°F.
- In a pan, sauté olive oil, garlic, and onion.
- Add ground turkey and season with chili powder, paprika, cumin, garlic powder, salt, pepper, and cayenne.
- Stir in tomato sauce and beef broth. Let simmer until thickened.
- Warm refried beans over low heat.
- Lay out tortillas. Fill each with beans, turkey, and cheese. Roll tightly.
- In a casserole dish, spread ½ cup enchilada sauce on the bottom. Place filled tortillas seam-side down.
- Top with remaining sauce and cheese. Bake for 20 minutes.
- Garnish with cilantro, green onion, or a spoonful of Greek yogurt.
