Healthy Meatloaf

Ingredients:
- cooking spray
- 1 tablespoon olive oil
- 1 green bell pepper, diced
- ½ cup diced sweet onion
- ½ teaspoon minced garlic
- 1 pound extra-lean (95%) ground beef
- 1 cup whole wheat bread crumbs
- Âľ cup shredded carrot
- Âľ cup shredded zucchini
- 2 large eggs
- salt and ground black pepper to taste
- ÂĽ cup ketchup, or to taste
- Preheat the oven to 350°F (175°C).
- In a bowl, combine beef, egg, onion, milk, and bread crumbs. Season with salt and pepper.
- Place in a lightly greased loaf pan.
- In a separate bowl, mix brown sugar, mustard, and ketchup. Pour over the meatloaf.
- Bake for 1 hour or until cooked through.
