Healthy Meatloaf

A lighter take on a family classic—this healthy meatloaf is juicy, flavorful, and perfect for weeknight dinners! 🍽️

Ingredients:
  • cooking spray
  • 1 tablespoon olive oil
  • 1 green bell pepper, diced
  • ½ cup diced sweet onion
  • ½ teaspoon minced garlic
  • 1 pound extra-lean (95%) ground beef
  • 1 cup whole wheat bread crumbs
  • Âľ cup shredded carrot
  • Âľ cup shredded zucchini
  • 2 large eggs
  • salt and ground black pepper to taste
  • ÂĽ cup ketchup, or to taste
Directions:
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine beef, egg, onion, milk, and bread crumbs. Season with salt and pepper.
  3. Place in a lightly greased loaf pan.
  4. In a separate bowl, mix brown sugar, mustard, and ketchup. Pour over the meatloaf.
  5. Bake for 1 hour or until cooked through.
