Healthy No-Bake Cookies
These peanut butter–chocolate no-bake cookies are a healthier twist on the classic—dairy-free, vegan, and made with half the sugar. Using coconut oil instead of butter and coconut sugar instead of refined sugar, they come together in just 15 minutes. Perfect for when you need a sweet treat without turning on the oven!

Ingredients:
- ½ cup melted coconut oil
- ½ cup natural creamy peanut butter (or almond butter)
- ½ cup coconut sugar
- ¼ cup cocoa powder or cacao powder
- ¼ cup unsweetened vanilla almond milk
- Pinch of sea salt
- 1 teaspoon pure vanilla extract
- 2 cups quick oats (instant oats)
- Mix the base: In a large mixing bowl, stir together melted coconut oil and peanut butter until smooth.
- Add the rest: Mix in coconut sugar, cocoa powder, almond milk, sea salt, and vanilla until combined.
- Incorporate oats: Add oats and stir well.
- Scoop & shape: Drop spoonfuls of the mixture onto a parchment-lined baking sheet, pressing lightly to shape cookies.
- Set & store: Chill in the fridge until firm, then enjoy. Store leftovers in an airtight container in the fridge for up to 1–2 weeks or freeze for up to 3 months.
