Hoisin Chicken Lettuce Wraps

Light, flavorful, and perfect for a warm day—these wraps are packed with savory-sweet grilled chicken and a touch of heat.

Ingredients:
  • 2 pounds chicken breast
  • 1 head of Bibb or Boston lettuce (leaves separated and washed)
  • Sesame seeds, for garnish (optional)
For the Sauce:
  • ½ cup hoisin sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon fresh ginger, minced
  • 4 cloves garlic, minced
  • 3 tablespoons low-sodium soy sauce
  • 2 teaspoons sriracha (adjust to taste)
Instructions:
  1. In a small bowl, stir together all the sauce ingredients.
  2. Pour half of the sauce into a large zip-top bag. Set the remaining sauce aside.
  3. Add the chicken breasts to the bag, seal, and shake gently to coat.
  4. Let the chicken marinate in the fridge for at least 1 hour (overnight is even better).
  5. When ready to cook, preheat your grill to 400°F and lightly grease the grates.
  6. Remove chicken from the marinade and grill for about 4–6 minutes per side, depending on thickness, until fully cooked.
  7. Let the chicken rest a few minutes, then chop it into bite-sized pieces.
  8. While the chicken rests, warm the reserved sauce in a saucepan over medium heat.
  9. Toss the chopped chicken in the warm sauce until well coated.
  10. Spoon into lettuce leaves, sprinkle with sesame seeds if you like, and enjoy right away!
