- 1 medium apple
- 1 lb ground chicken (use a mix of light and dark meat for juiciness)
- 2 cloves garlic, minced
- 2 scallions, thinly sliced
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon fennel seeds
- ¼ teaspoon crushed red pepper
- Pinch of ground nutmeg
- 4 teaspoons canola oil, divided
- Prep the apple: Grate it on the large holes of a box grater. Discard the core and stem. Wrap the grated apple in a paper towel and squeeze out the juice (reserve the grated apple for the recipe). Roughly chop the grated apple and place it in a large bowl.
- Make the mixture: Add ground chicken, garlic, scallions, salt, pepper, fennel seeds, crushed red pepper, and nutmeg to the apple. Gently mix with your hands until combined. Shape into 8 balls and place on a parchment-lined baking sheet.
- Cook the patties: Heat 2 teaspoons of oil in a large cast iron skillet over medium heat. Flatten 4 of the balls into 3-inch patties. Cook until browned on both sides and cooked through, 6–8 minutes total. Transfer to a plate and tent with foil to keep warm.
- Repeat: Add the remaining oil to the skillet and cook the remaining patties. Serve warm.
