Homemade Chicken Apple Sausage

Sweet apple, savory spices, and juicy chicken come together in a quick, skillet-cooked sausage you can whip up in just 30 minutes. Perfect for breakfast, brunch, or a light supper—it’s so easy, you may never go back to store-bought.

Ingredients (Serves 4):
  • 1 medium apple
  • 1 lb ground chicken (use a mix of light and dark meat for juiciness)
  • 2 cloves garlic, minced
  • 2 scallions, thinly sliced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon fennel seeds
  • ¼ teaspoon crushed red pepper
  • Pinch of ground nutmeg
  • 4 teaspoons canola oil, divided
Directions:
  1. Prep the apple: Grate it on the large holes of a box grater. Discard the core and stem. Wrap the grated apple in a paper towel and squeeze out the juice (reserve the grated apple for the recipe). Roughly chop the grated apple and place it in a large bowl.
  2. Make the mixture: Add ground chicken, garlic, scallions, salt, pepper, fennel seeds, crushed red pepper, and nutmeg to the apple. Gently mix with your hands until combined. Shape into 8 balls and place on a parchment-lined baking sheet.
  3. Cook the patties: Heat 2 teaspoons of oil in a large cast iron skillet over medium heat. Flatten 4 of the balls into 3-inch patties. Cook until browned on both sides and cooked through, 6–8 minutes total. Transfer to a plate and tent with foil to keep warm.
  4. Repeat: Add the remaining oil to the skillet and cook the remaining patties. Serve warm.
Tip: Ground chicken breast alone will be too lean. Use a blend of light and dark meat for the best texture and flavor.
