- ⅔ cup all-purpose flour
- ¼ stick unsalted butter
- 1 cup water
- salt , a pinch
- 2 teaspoons sugar
- 1 egg

- In a medium saucepan, combine water, butter, sugar, and a pinch of salt, then bring to a boil.
- Stir in the flour and mix quickly until fully incorporated (the dough should come together within a minute or two).
- Remove from heat and let it cool slightly. Once it’s warm but not too hot, add the egg and quickly mix it into the dough—though it may seem tricky at first, it will come together.
- Heat oil in a large frying pan.
- Transfer half of the dough into a piping bag fitted with a star tip for easier handling.
- Test the oil by dropping in a small piece of dough—when it turns golden, the oil is ready to fry.
- Pipe the dough into the hot oil, cutting it to your preferred length with a fork. Be careful not to overcrowd the pan, and fry until golden brown (about 2 minutes). If they’re not browning evenly, reduce the heat.
- Remove the churros and drain on a paper towel.
- While still warm, roll each churro in a mixture of sugar and cinnamon.
- Serve warm with thick hot chocolate or chocolate pudding.
- Mix the egg into the dough quickly to avoid cooking it. It might be a bit tricky since the dough will be firm at this stage. If you’re having trouble mixing with a wooden spoon, an electric mixer can help.
- You can pipe the churros directly into the hot oil, or pipe them onto parchment paper first and then transfer them into the oil.
