Ingredients:
  • 3 tablespoons all-purpose flour
  • 3/4 teaspoon salt
  • 3/4 teaspoon black pepper
  • 4 pork sirloin cutlets (4 ounces each)
  • 2 tablespoons butter
  • 1/4 cup lemon juice
  • 1/4 cup honey

Directions:
  1. In a small bowl, combine flour, salt, and pepper. Lightly coat both sides of each pork cutlet with the mixture.
  2. Heat butter in a large skillet (cast iron works great!) over medium heat. Add pork and cook for 2-3 minutes per side, or until a meat thermometer reads 145°F. Remove pork from the skillet and set aside.
  3. In the same skillet, add lemon juice and honey. Stir and cook over medium heat until the sauce thickens slightly, about 3 minutes.
  4. Return the pork to the pan, spoon the sauce over the cutlets, and heat through. Serve with your favorite sides and enjoy!
