Honey Vanilla Mascarpone Pies

Ingredients:
Pies

  • 4 ounces mascarpone cheese
  • 1 1/2 tablespoons honey
  • 1 teaspoon vanilla extract or 1 scraped vanilla bean or equivalent dried vanilla
  • 1 5.3 oz container honey Greek yogurt I used Open Nature Brand from Albertsons
  • 1 cup whipping cream
  • 4 tablespoons powdered sugar
  • 12 mini graham cracker pie crusts
  • 3 cups assorted berries or other fruit of choice
  • Optional: mint leaves for garnish
Glaze
  • 3 tablespoons honey
  • 1 teaspoon balsamic vinegar
  • 1/4 teaspoon vanilla extract or pinch of vanilla bean
Method:
  1. In a medium bowl, beat together mascarpone, honey, and vanilla with a hand mixer until smooth. Add yogurt and mix briefly until just combined; set aside.
  2. In a separate bowl, whip cream with powdered sugar until medium peaks form. Gently fold whipped cream into the mascarpone mixture, a few spoonfuls at a time—do not stir.
  3. Evenly divide the filling among graham crusts and top with fresh fruit.
  4. In a small bowl, whisk honey, balsamic, and vanilla glaze together, then drizzle over the pies. Garnish with mint if desired. Serve immediately or chill for 1–2 hours before serving.
Note: Mascarpone is an Italian-style cream cheese with a milder flavor than American cream cheese. It can be substituted with cream cheese for a more cheesecake-like taste.
