- 1 cup whipping cream
- 4 tablespoons powdered sugar
- 12 mini graham cracker pie crusts
- 3 cups assorted berries or other fruit of choice
- Optional: mint leaves for garnish
- 3 tablespoons honey
- 1 teaspoon balsamic vinegar
- 1/4 teaspoon vanilla extract or pinch of vanilla bean
- In a medium bowl, beat together mascarpone, honey, and vanilla with a hand mixer until smooth. Add yogurt and mix briefly until just combined; set aside.
- In a separate bowl, whip cream with powdered sugar until medium peaks form. Gently fold whipped cream into the mascarpone mixture, a few spoonfuls at a time—do not stir.
