Huevos Rancheros

Start your day off right with this vibrant Huevos Rancheros! Packed with flavor, black beans, salsa, and a perfectly baked egg on a crispy tostada, it’s a delicious and satisfying meal that’s as easy as it is tasty.

Ingredients:

For the Huevos Rancheros:
1 Tbsp. extra-virgin olive oil
1 onion, chopped
1 tsp. cumin
1 tsp. chili powder
Kosher salt, to taste
1 cup black beans, drained and rinsed
1 cup salsa
1 cup shredded Monterey Jack cheese
4 large eggs

For serving:
4 corn tostadas
1 avocado, sliced
1 Tbsp. freshly chopped cilantro
Hot sauce
Sour cream

Directions:
  1. Preheat your oven to 400ºF.
  2. In a large skillet over medium heat, warm the olive oil. Add chopped onion and cook until softened, about 5 minutes. Stir in cumin, chili powder, and a pinch of salt.
  3. Add black beans and salsa, stirring to combine and heat through.
  4. Sprinkle shredded Monterey Jack cheese over the mixture. Create four small wells with a spoon and crack one egg into each. Season with a little salt.
  5. Bake for 8-10 minutes, or until the egg whites are set but the yolks remain runny.
  6. Serve each egg mixture on top of a tostada. Garnish with avocado slices, cilantro, and drizzle with hot sauce and sour cream for extra flavor. Enjoy!
