Ingredients:
- 1 (8-inch) whole wheat pita bread
- ½ cup hummus
- ½ cup shredded mozzarella cheese
- 1 tablespoon olive oil
- 1 small tomato, sliced
- ¼ cup red onion, thinly sliced
- ¼ cup black olives, sliced
- ¼ teaspoon dried oregano
- Fresh parsley, chopped (optional)
- Preheat the oven to 400°F (200°C).
- Place the pita on a baking sheet and lightly brush with olive oil.
- Spread hummus evenly over the pita, leaving a small border around the edges.
- Top with shredded mozzarella cheese, sliced tomatoes, red onion, and black olives.
- Sprinkle with oregano and bake for 8–10 minutes, or until the cheese is melted and the edges of the pita are crispy.
- Remove from the oven and sprinkle with fresh parsley before serving.
