Jalapeño Popper Chicken Skillet

Ingredients:
  • 1 whole rotisserie chicken
  • 4 slices thick-cut bacon (about 1/4 lb.), cut into 1/2" pieces
  • 2 jalapeños, seeded and chopped (plus extra for garnish)
  • 3 cloves garlic, finely chopped
  • Kosher salt, to taste
  • 1 (8-oz.) block cream cheese
  • 1/2 cup heavy cream or half-and-half
  • 4 oz. sharp cheddar cheese, shredded (about 1 cup)
  • Chopped fresh cilantro, for garnish
Directions:
  1. Prep the chicken:
    Preheat your oven to 400°F. Remove the chicken breasts from the rotisserie chicken and set them aside. Shred the remaining meat and discard the skin and bones (or save them for homemade stock!).
  2. Cook the bacon:
    In a medium oven-safe skillet over medium-high heat, cook the bacon pieces until crispy (about 6-8 minutes).
  3. Sauté the veggies:
    Add the chopped jalapeños and garlic to the skillet and stir for about 1 minute until fragrant. Season with a pinch of salt.
  4. Make it creamy:
    Stir in the cream cheese and let it melt, combining everything into a creamy mixture. Pour in the heavy cream and stir until smooth.
  5. Add the chicken:
    Stir the shredded chicken into the skillet mixture, making sure it’s well coated in the creamy sauce.
  6. Top it off:
    Sprinkle the shredded cheddar cheese evenly over the top. Slice the reserved chicken breasts into 1/2" pieces and fan them over the top of the skillet.
  7. Bake:
    Transfer the skillet to the oven and bake for 15-20 minutes, until the cheese is melted and bubbly.
  8. Garnish and serve:
    Top with extra sliced jalapeños and chopped cilantro before serving.
