- 1 whole rotisserie chicken
- 4 slices thick-cut bacon (about 1/4 lb.), cut into 1/2" pieces
- 2 jalapeños, seeded and chopped (plus extra for garnish)
- 3 cloves garlic, finely chopped
- Kosher salt, to taste
- 1 (8-oz.) block cream cheese
- 1/2 cup heavy cream or half-and-half
- 4 oz. sharp cheddar cheese, shredded (about 1 cup)
- Chopped fresh cilantro, for garnish
- Prep the chicken:
Preheat your oven to 400°F. Remove the chicken breasts from the rotisserie chicken and set them aside. Shred the remaining meat and discard the skin and bones (or save them for homemade stock!). - Cook the bacon:
In a medium oven-safe skillet over medium-high heat, cook the bacon pieces until crispy (about 6-8 minutes). - Sauté the veggies:
Add the chopped jalapeños and garlic to the skillet and stir for about 1 minute until fragrant. Season with a pinch of salt. - Make it creamy:
Stir in the cream cheese and let it melt, combining everything into a creamy mixture. Pour in the heavy cream and stir until smooth. - Add the chicken:
