Jalapeno Popper Stuffed Chicken

Ingredients:
For the filling:- 2 jalapeños, finely minced (or green bell pepper for a mild version)
- 60g (2 oz) cream cheese
- ½ cup shredded mozzarella cheese
- 2 tbsp grated parmesan cheese
- ½ tsp garlic powder (or substitute with fresh minced garlic)
- 2 large chicken breasts
- ½ tsp paprika
- Salt, to taste
- Toothpicks (for sealing)
Directions
- Make the filling: In a bowl, combine jalapeños, cream cheese, mozzarella, parmesan, and garlic powder until smooth and spreadable.
- Prep the chicken: Cut a pocket into each chicken breast by slicing horizontally—don’t cut all the way through.
- Stuff: Fill each pocket with the jalapeño-cheese mixture. Use toothpicks to seal the openings if needed.
- Season: Sprinkle both sides of the chicken with paprika and salt.
- Sear: Heat an oven-proof skillet over medium heat. Sear chicken for 2 minutes per side until golden.
- Bake: Transfer skillet to a preheated oven at 180°C/350°F (160°C fan) and bake for 15 minutes, or until the internal temperature reaches 67°C/155°F.
- Rest: Let chicken rest for 5 minutes before serving. This helps the juices stay in the meat!
