Japanese Coffee Jelly

Ingredients:
2 cups boiling water
2 tablespoons instant coffee (or use hot brewed coffee if preferred)
1 cup cold water
2–3 tablespoons brown sugar (adjust to taste)
2 teaspoons unflavored gelatin
Whipped cream, caramel syrup, chocolate syrup (optional toppings)

Directions:
  1. In a bowl, add 2 cups of boiling water and 2 tablespoons of instant coffee. Stir until the coffee is fully dissolved. (You can substitute freshly brewed hot coffee if desired.)
  2. Add 1 cup of cold water and 2–3 tablespoons of brown sugar, stirring until the sugar dissolves completely.
  3. Sprinkle in 2 teaspoons of unflavored gelatin, mixing well to ensure it's fully combined with the coffee mixture.
  4. Pour the mixture into individual serving cups or a shallow dish, then place it in the refrigerator for a few hours or until the jelly is set.
  5. Once the coffee jelly is firm, serve it with a dollop of whipped cream or drizzle with caramel or chocolate syrup to sweeten, if desired.
