Lemon-Pepper Salmon

Ingredients
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 4 (4 ounce) salmon steaks
  • 1 teaspoon minced garlic
  • 1 tablespoon lemon pepper
  • 1 teaspoon salt
  • ¼ cup water
  • 1 cup chopped fresh tomatoes
  • 1 cup chopped fresh cilantro
  • 2 cups boiling water
  • 1 cup uncooked couscous
Method
  1. In a large skillet, heat the butter and olive oil over medium heat. Add the salmon and season with garlic, lemon pepper, and salt. Pour 1/4 cup of water around the salmon, then add the tomatoes and cilantro to the skillet. Cover and cook for about 15 minutes, or until the salmon flakes easily with a fork.
  2. Bring 2 cups of water to a boil in a pot, then remove it from the heat. Stir in the couscous, cover, and let it rest for 5 minutes. Plate the cooked salmon on top of the couscous and drizzle with the flavorful sauce from the skillet.
