- 4 (4 ounce) salmon steaks

- ¼ cup water
- 1 cup chopped fresh tomatoes
- 1 cup chopped fresh cilantro
- 2 cups boiling water
- 1 cup uncooked couscous
- In a large skillet, heat the butter and olive oil over medium heat. Add the salmon and season with garlic, lemon pepper, and salt. Pour 1/4 cup of water around the salmon, then add the tomatoes and cilantro to the skillet. Cover and cook for about 15 minutes, or until the salmon flakes easily with a fork.
