Low Sodium Meatloaf
This comforting meatloaf was developed for a family member on a restricted sodium diet, offering big flavor without excess salt. Made with lean beef, tender vegetables, oats, and a tangy-sweet tomato glaze, it’s a hearty main dish that fits perfectly into a heart-healthy menu.
Ingredients:
Meatloaf- 1 tbsp olive oil
- ½ cup onion, finely chopped
- ⅓ cup celery, finely chopped
- ⅓ cup carrot, finely chopped
- 2 lbs lean ground beef
- 1 cup rolled oats
- 1 egg
- 1 tsp garlic, minced
- 1 tbsp Worcestershire sauce
- ½ cup milk
- 2 tsp Mrs. Dash seasoning mix
- ½ tsp ground pepper
- 8 oz no-salt-added tomato sauce
- ¼ cup brown sugar
- 1 tbsp yellow mustard
- 1 tbsp cider vinegar
Directions:
- Heat olive oil in a skillet over medium heat. Cook onion, celery, and carrot until tender; cool slightly.
- In a large bowl, combine the vegetables, ground beef, oats, egg, garlic, Worcestershire sauce, milk, seasoning mix, and pepper. Mix gently with hands until combined. Shape into a loaf and place in a baking pan.
- In a small bowl, stir together tomato sauce, brown sugar, mustard, and vinegar. Spread over the meatloaf.
- Preheat oven to 350°F and bake for 1 hour, or until internal temperature reaches 160°F.
- Let rest briefly, slice, and enjoy.
