Low Sodium Meatloaf

This comforting meatloaf was developed for a family member on a restricted sodium diet, offering big flavor without excess salt. Made with lean beef, tender vegetables, oats, and a tangy-sweet tomato glaze, it’s a hearty main dish that fits perfectly into a heart-healthy menu.

Ingredients:

Meatloaf
  • 1 tbsp olive oil
  • ½ cup onion, finely chopped
  • ⅓ cup celery, finely chopped
  • ⅓ cup carrot, finely chopped
  • 2 lbs lean ground beef
  • 1 cup rolled oats
  • 1 egg
  • 1 tsp garlic, minced
  • 1 tbsp Worcestershire sauce
  • ½ cup milk
  • 2 tsp Mrs. Dash seasoning mix
  • ½ tsp ground pepper
Sauce
  • 8 oz no-salt-added tomato sauce
  • ¼ cup brown sugar
  • 1 tbsp yellow mustard
  • 1 tbsp cider vinegar

Directions:

  1. Heat olive oil in a skillet over medium heat. Cook onion, celery, and carrot until tender; cool slightly.
  2. In a large bowl, combine the vegetables, ground beef, oats, egg, garlic, Worcestershire sauce, milk, seasoning mix, and pepper. Mix gently with hands until combined. Shape into a loaf and place in a baking pan.
  3. In a small bowl, stir together tomato sauce, brown sugar, mustard, and vinegar. Spread over the meatloaf.
  4. Preheat oven to 350°F and bake for 1 hour, or until internal temperature reaches 160°F.
  5. Let rest briefly, slice, and enjoy.
