Marry Me Chicken Soup

As the days get cooler, there’s nothing better than wrapping your hands around a warm, hearty bowl of soup. This creamy chicken and pasta dish, with sun-dried tomatoes and Parmesan, is pure comfort—rich, cozy, and just right for a crisp autumn day.

Ingredients (3 servings):

  • ¼ cup drained julienne-cut sun-dried tomatoes (packed in oil with herbs)
  • ½ Tbsp oil from sun-dried tomato jar, divided
  • ¾ cup chopped yellow onion
  • 2 medium garlic cloves, minced (about 4 tsp)
  • 1 ½ Tbsp tomato paste
  • 1 (32-oz) package chicken broth
  • ½ cup heavy whipping cream
  • 2 tsp chopped fresh basil (plus extra for garnish, optional)
  • 1 tsp kosher salt
  • ¾ tsp dried Italian seasoning
  • ½ tsp garlic powder
  • ⅛ tsp crushed red pepper (plus extra for garnish)
  • 4 oz uncooked medium shell pasta
  • 1 ½ cups roughly chopped fresh baby spinach
  • 1 cup shredded rotisserie chicken
  • 4 oz cream cheese, cubed, room temperature
  • ¾ oz Parmesan cheese, finely shredded (plus extra for garnish)
Directions:

  1. Sauté the base. Heat ½ Tbsp of oil from the sun-dried tomato jar in a large Dutch oven over medium heat until shimmering. Add onion and garlic; cook, stirring often, until softened (3–4 minutes).
  2. Add flavor. Stir in tomato paste and sun-dried tomatoes; cook, stirring constantly, until the paste turns a deeper red (about 2 minutes).
  3. Build the broth. Pour in chicken broth, cream, basil, salt, Italian seasoning, garlic powder, and crushed red pepper. Bring to a boil over medium, stirring occasionally (about 12 minutes).
  4. Cook the pasta. Add pasta; reduce heat to medium-low and cook, stirring occasionally, until pasta is al dente (about 12 minutes).
  5. Finish with the good stuff. Lower heat to low. Stir in spinach, chicken, cream cheese, and Parmesan. Cook, stirring often, until cheeses are melted and chicken is heated through (about 5 minutes).
  6. Serve and enjoy. Garnish with extra Parmesan, basil, and crushed red pepper. Serve hot.
