Melting Broccoli
This surprisingly simple side turns ordinary broccoli into something soft, caramelized, and melt-in-your-mouth. The trick is roasting until tender, then simmering in a flavored liquid until the florets practically dissolve into rich goodness. Serve it as a standout side or mix it into rice or noodles for depth.

- ½ teaspoon grated fresh ginger
- 1/4 cup sliced scallions
- 1/3 cup unsalted vegetable broth
- 1 tablespoon white miso paste
- 1 teaspoon rice vinegar
- 2 tablespoons toasted sesame oil
- 2 large cloves garlic, grated
- ¾ teaspoon chili crisp (optional)
- ¼ teaspoon salt
- ¼ teaspoon ground pepper
- Preheat oven and arrange broccoli on a sheet pan. Roast until the edges begin to brown and the florets are tender.
- In a small bowl, whisk together miso paste, broth, rice vinegar, sesame oil, ginger, garlic, salt, and pepper.
- Transfer the roasted broccoli to a skillet, pour in the miso mixture, and simmer gently until the liquid reduces and the broccoli is “melting” soft.
- Stir in scallions and chili crisp just before serving.
