Melting Broccoli

This surprisingly simple side turns ordinary broccoli into something soft, caramelized, and melt-in-your-mouth. The trick is roasting until tender, then simmering in a flavored liquid until the florets practically dissolve into rich goodness. Serve it as a standout side or mix it into rice or noodles for depth.

Ingredients:
  • 8 cups broccoli florets
  • ½ teaspoon grated fresh ginger
  • 1/4 cup sliced scallions
  • 1/3 cup unsalted vegetable broth
  • 1 tablespoon white miso paste
  • 1 teaspoon rice vinegar
  • 2 tablespoons toasted sesame oil
  • 2 large cloves garlic, grated
  • ¾ teaspoon chili crisp (optional)
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper
Directions:
  1. Preheat oven and arrange broccoli on a sheet pan. Roast until the edges begin to brown and the florets are tender.
  2. In a small bowl, whisk together miso paste, broth, rice vinegar, sesame oil, ginger, garlic, salt, and pepper.
  3. Transfer the roasted broccoli to a skillet, pour in the miso mixture, and simmer gently until the liquid reduces and the broccoli is “melting” soft.
  4. Stir in scallions and chili crisp just before serving.
