Ingredients:
2 tablespoons butter (or mild extra virgin olive oil/neutral oil)
1/4 cup (30g) all-purpose flour
3 tablespoons (35g) sugar
2 tablespoons (13g) natural unsweetened cocoa powder
Pinch of kosher salt (if using unsalted butter)
Tiny pinch of cinnamon (optional)
3 tablespoons (44ml) milk, water, or coffee
1/8 teaspoon vanilla extract
Ice cream, whipped cream, or heavy cream, for serving
Method:
- Melt the butter: Place the butter in a microwave-safe bowl or ramekin. Microwave at 50% power (about level 5 on most microwaves) for 30 seconds, and if not fully melted, continue to microwave in 10-second intervals. If using olive oil or neutral oil, skip this step.
- Combine dry ingredients: In a microwave-safe ceramic mug, stir together flour, sugar, cocoa powder, salt (if needed), and optional cinnamon until no clumps remain and it resembles brown sand.
- Add wet ingredients: Stir in the melted butter (or oil) until a paste forms. Then, add milk (or water or coffee) and vanilla extract. Stir until smooth; the batter will be slightly thin—that's how it should be!
- Microwave: Microwave the mug on high for 1 minute. If your microwave has lower wattage, it may need more time; start with 1 minute and continue in 10-second intervals until the brownie is set but slightly moist.
- Rest: Let the brownie rest for 4 minutes to set and enhance flavor.
- Serve: Top with a scoop of vanilla ice cream, whipped cream, or a dollop of heavy cream. Enjoy your delicious, gooey brownie!
