- 3 cups fresh raspberries
- 3 cups fresh blackberries
- 2 cups fresh blueberries
- 2 cups fresh strawberries, sliced
- 1 1/3 cups sugar, divided
- 4 tsp orange zest
- 1 cup orange juice
- 1 cup heavy whipping cream
- 2 (8 oz) cartons mascarpone cheese
- 1 tsp vanilla extract
- 2 (7 oz) packages crisp ladyfinger cookies
- Extra berries for topping (optional)
Directions:
- Marinate the berries: In a large bowl, gently toss all the berries with 1/3 cup sugar, orange zest, and orange juice. Cover and refrigerate for 45 minutes.
- Make the creamy filling: Beat the whipping cream until soft peaks form. In a separate bowl, combine mascarpone, vanilla, and the remaining 1 cup of sugar. Fold the whipped cream into the mascarpone mixture in thirds until smooth.
- Assemble the tiramisu: Drain the berries, saving the juice. Quickly dip each ladyfinger into the juice (don’t soak—just a quick dip!) and lay in a single layer in a 13x9-inch dish. Top with half the berries, then half the cream. Repeat layers.
- Chill and serve: Cover and refrigerate overnight. Before serving, top with extra berries if desired.
