Nargesi (Persian-Style Spinach & Eggs)

Nargesi is a classic Persian dish that gently simmers golden onions, garlicky spinach, and turmeric-spiced eggs into one fragrant, feel-good skillet. Pair it with warm bread and you've got a simple, healthy meal with centuries of tradition behind it.

Ingredients:
  • 3 tablespoons olive oil
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 6 cups baby spinach*
  • 4 large eggs
  • ½ teaspoon ground turmeric
  • Kosher salt and freshly ground black pepper
  • Warm bread, for serving

Directions:
  1. Heat the olive oil in a large skillet over medium heat until shimmering.
  2. Add the sliced onion and cook, stirring occasionally, until golden—about 8 minutes.
  3. Stir in the garlic and cook for 1 minute, just until fragrant.
  4. Add the baby spinach and cook, stirring now and then, until fully wilted—about 7 to 8 minutes.
  5. Season with turmeric, ½ teaspoon salt, and ¼ teaspoon pepper.
  6. Make four shallow wells in the spinach mixture with a spoon, and crack an egg into each one.
  7. Cover the skillet and cook on medium-low until the eggs are done to your liking, about 5 to 8 minutes.
  8. Serve warm with bread for dipping—lavash, pita, or toast all work beautifully.
* If using regular spinach with larger leaves, give them a quick chop before cooking. You can add the spinach in batches—it wilts down quickly.
