- 3 tablespoons olive oil
- 1 large onion, sliced
- 4 cloves garlic, minced
- 6 cups baby spinach*
- 4 large eggs
- ½ teaspoon ground turmeric
- Kosher salt and freshly ground black pepper
- Warm bread, for serving
Directions:
- Heat the olive oil in a large skillet over medium heat until shimmering.
- Add the sliced onion and cook, stirring occasionally, until golden—about 8 minutes.
- Stir in the garlic and cook for 1 minute, just until fragrant.
- Add the baby spinach and cook, stirring now and then, until fully wilted—about 7 to 8 minutes.
- Season with turmeric, ½ teaspoon salt, and ¼ teaspoon pepper.
- Make four shallow wells in the spinach mixture with a spoon, and crack an egg into each one.
- Cover the skillet and cook on medium-low until the eggs are done to your liking, about 5 to 8 minutes.
- Serve warm with bread for dipping—lavash, pita, or toast all work beautifully.
