No-Bake Pumpkin Pie

There’s nothing like the cozy flavor of pumpkin pie—especially when you don’t even have to turn on the oven! This no-bake classic is silky, spiced just right, and perfect for fall.

Ingredients (serves 8):
  • 1 (.25 ounce) package unflavored gelatin
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 (14 ounce) can sweetened condensed milk
  • 2 eggs, beaten
  • 1 (15 ounce) can pumpkin puree
  • 1 (9 inch) prepared graham cracker crust
Directions:
  1. In a heavy saucepan, combine gelatin, cinnamon, ginger, nutmeg, and salt. Stir in the condensed milk and beaten eggs until well mixed. Let sit for 1 minute.
  2. Place the pan over low heat and stir constantly until the gelatin dissolves and the mixture thickens—about 10 minutes. Remove from heat.
  3. Stir in pumpkin puree until smooth and creamy.
  4. Pour into graham cracker crust. Chill for at least 3 hours before serving.
