One-Pan Cheeseburger Rice

- 1/2 medium onion, finely chopped
- 1 pound ground turkey or ground beef
- 1 teaspoon kosher salt
- 3/4 teaspoon freshly ground black pepper, divided
- 1/2 teaspoon garlic powder
- 4 tablespoons ketchup, divided
- 2 1/2 tablespoons Worcestershire sauce
- 1 (14.5 ounce) can beef broth
- 1/4 cup water
- 1 cup rice
- 3 tablespoons mayonnaise
- 2 teaspoons yellow mustard
- 8 ounces Cheddar cheese, shredded

- Set your oven to Low Broil setting.
- In a large, deep oven-safe skillet, heat oil over medium-high. Sauté onion for 1 minute, then add turkey, breaking it up as it browns (about 7 minutes).
- Mix in salt, ½ tsp pepper, garlic powder, 3 tbsp ketchup, and Worcestershire. Pour in broth and water, scraping up browned bits while bringing to a boil.
- Mix in rice, return to a boil, then cover and simmer on medium-low until rice is tender (about 20 minutes). Add water as needed if the pan dries out.
- Right before serving, fold 1¼ cups cheese into the rice and sprinkle the rest on top.
- Broil just until cheese melts (about 3 minutes), then rest 5 minutes.
- For the sauce: Blend remaining pepper, ketchup, mayo, and mustard. Serve bowls topped with pickles, lettuce, and sauce.
