One-Pan Cheeseburger Rice

This hearty one-pan wonder combines all your favorite comfort foods—ready in just 30 minutes!

Ingredients:
  • 1 tablespoon oil
  • 1/2 medium onion, finely chopped
  • 1 pound ground turkey or ground beef
  • 1 teaspoon kosher salt
  • 3/4 teaspoon freshly ground black pepper, divided
  • 1/2 teaspoon garlic powder
  • 4 tablespoons ketchup, divided
  • 2 1/2 tablespoons Worcestershire sauce
  • 1 (14.5 ounce) can beef broth
  • 1/4 cup water
  • 1 cup rice
  • 3 tablespoons mayonnaise
  • 2 teaspoons yellow mustard
  • 8 ounces Cheddar cheese, shredded
  • chopped dill pickles and lettuce
Method:
  1. Set your oven to Low Broil setting.
  2. In a large, deep oven-safe skillet, heat oil over medium-high. Sauté onion for 1 minute, then add turkey, breaking it up as it browns (about 7 minutes).
  3. Mix in salt, ½ tsp pepper, garlic powder, 3 tbsp ketchup, and Worcestershire. Pour in broth and water, scraping up browned bits while bringing to a boil.
  4. Mix in rice, return to a boil, then cover and simmer on medium-low until rice is tender (about 20 minutes). Add water as needed if the pan dries out.
  5. Right before serving, fold 1¼ cups cheese into the rice and sprinkle the rest on top.
  6. Broil just until cheese melts (about 3 minutes), then rest 5 minutes.
  7. For the sauce: Blend remaining pepper, ketchup, mayo, and mustard. Serve bowls topped with pickles, lettuce, and sauce.
