- 1 tbsp olive oil
- 75g / 2.5 oz salami, chopped
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1/2 tsp dried thyme
- 1/4 tsp red pepper flakes (optional)
- 500g / 1 lb chicken breast, cut into bite-size pieces
- 1 1/2 cups risoni/orzo pasta (uncooked)
- 2 1/2 cups chicken stock
- 1 cup milk
- 1 cup frozen peas
- 1/2 cup grated parmesan cheese
- Salt and pepper, to taste
- Fresh parsley, for garnish (optional)
- Heat olive oil in a large pot over medium-high heat. Add salami and cook until crispy. Remove and set aside.
- In the same pot, sauté onion and garlic for 2 minutes until softened. Add thyme and red pepper flakes.
- Add chicken, season with salt and pepper, and cook until lightly browned.
- Stir in risoni, chicken stock, and milk. Bring to a simmer, cover, and cook for 10 minutes, stirring occasionally.
- Stir in peas, cook for another 2 minutes until risoni is tender and chicken is cooked through.
- Add parmesan and stir through until melted and creamy.
- Return crispy salami on top and sprinkle with fresh parsley before serving.
