One Pot Chicken Risoni with Crispy Salami

Directions:
  • 1 tbsp olive oil
  • 75g / 2.5 oz salami, chopped
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 tsp dried thyme
  • 1/4 tsp red pepper flakes (optional)
  • 500g / 1 lb chicken breast, cut into bite-size pieces
  • 1 1/2 cups risoni/orzo pasta (uncooked)
  • 2 1/2 cups chicken stock
  • 1 cup milk
  • 1 cup frozen peas
  • 1/2 cup grated parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)
Directions:
  1. Heat olive oil in a large pot over medium-high heat. Add salami and cook until crispy. Remove and set aside.
  2. In the same pot, sauté onion and garlic for 2 minutes until softened. Add thyme and red pepper flakes.
  3. Add chicken, season with salt and pepper, and cook until lightly browned.
  4. Stir in risoni, chicken stock, and milk. Bring to a simmer, cover, and cook for 10 minutes, stirring occasionally.
  5. Stir in peas, cook for another 2 minutes until risoni is tender and chicken is cooked through.
  6. Add parmesan and stir through until melted and creamy.
  7. Return crispy salami on top and sprinkle with fresh parsley before serving.
