Parmesan Meat Loaf

Go ahead and use ground beef with a little extra fat—it’s the secret to keeping every bite moist and flavorful. Ingredients:
  • 1 ½ pounds ground beef
  • 1 large egg
  • 1 onion, grated
  • ½ cup flat-leaf parsley, chopped
  • ½ cup bread crumbs
  • ½ cup Parmesan, grated
  • ¼ cup tomato paste
  • Kosher salt and black pepper

Directions:
  1. Preheat oven to 400°F.
  2. In a large bowl, combine beef, egg, onion, parsley, bread crumbs, Parmesan, and tomato paste. Season with salt and pepper.
  3. On a foil-lined baking sheet, shape the mixture into an 8-inch loaf.
  4. Bake 40–50 minutes, until cooked through and lightly browned on top.

Serve it warm with mashed potatoes for a hearty, homey dinner that’ll have everyone asking for seconds.
