Ingredients:
  • 4 ripe peaches (about 4 cups, sliced)
  • 2 tablespoons margarine or butter
  • ¾ cup quick-cooking oats
  • ½ cup sugar
  • ¼ cup flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon lemon juice
Directions:
  1. Preheat oven to 375°F.
  2. Slice the peaches (no need to peel unless you prefer).
Tip: For fuzz-free slices, rub the washed peaches gently with a paper towel.
  3. Spread peach slices evenly in the bottom of an 8x8-inch baking dish.
  4. Melt margarine in a small saucepan over low heat.
  5. In a bowl, mix oats, sugar, flour, cinnamon, and lemon juice. Stir in the melted margarine until crumbly.
  6. Sprinkle topping over the peaches.
  7. Bake for about 20 minutes, until golden and bubbly.
  8. Serve warm or cold — either way, it tastes like summer.
