Ingredients:
- 4 ripe peaches (about 4 cups, sliced)
- 2 tablespoons margarine or butter
- ¾ cup quick-cooking oats
- ½ cup sugar
- ¼ cup flour
- 2 teaspoons ground cinnamon
- 1 teaspoon lemon juice
- Preheat oven to 375°F.
- Slice the peaches (no need to peel unless you prefer).
Tip: For fuzz-free slices, rub the washed peaches gently with a paper towel. - Spread peach slices evenly in the bottom of an 8x8-inch baking dish.
- Melt margarine in a small saucepan over low heat.
- In a bowl, mix oats, sugar, flour, cinnamon, and lemon juice. Stir in the melted margarine until crumbly.
- Sprinkle topping over the peaches.
- Bake for about 20 minutes, until golden and bubbly.
- Serve warm or cold — either way, it tastes like summer.
