- 1 English muffin, split and toasted
- 1 large egg, cooked (fried or scrambled)
- 1 tablespoon prepared basil pesto
- 1 slice cheese (such as mozzarella or your choice)
- Optional: baby spinach or arugula
- Toast the English muffin halves.
- Cook the egg to your liking.
- Spread pesto on both muffin halves. On the bottom half, layer the egg, cheese, and any greens. Top with the other muffin half.
- If desired, place in a sandwich press or panini press briefly to melt the cheese.
