Pesto Breakfast Sandwich

This Pesto Breakfast Sandwich layers fresh pesto, egg, melted cheese, and hearty bread into a sandwich that delivers big flavor first thing in the morning. Great when you want something beyond just toast but still quick.

Ingredients (serves 1):
  • 1 English muffin, split and toasted
  • 1 large egg, cooked (fried or scrambled)
  • 1 tablespoon prepared basil pesto
  • 1 slice cheese (such as mozzarella or your choice)
  • Optional: baby spinach or arugula
Directions:
  1. Toast the English muffin halves.
  2. Cook the egg to your liking.
  3. Spread pesto on both muffin halves. On the bottom half, layer the egg, cheese, and any greens. Top with the other muffin half.
  4. If desired, place in a sandwich press or panini press briefly to melt the cheese.
