Pikelets (Mini Pancakes)

These fluffy, bite-sized pancakes are a beloved Aussie classic - perfect for breakfast or afternoon tea!

Ingredients:
  • 1 cup (150g) self-raising flour
  • 1 tbsp sugar
  • 1 egg
  • 3/4 cup (185ml) milk
  • 1/2 tsp vanilla extract
  • 20g butter, melted
  • Extra butter for cooking
  • Jam & cream to serve
Directions:
  1. Whisk flour and sugar in a bowl. Make a well in center.
  2. Add egg, milk, vanilla and melted butter. Whisk until smooth.
  3. Heat pan over medium heat. Melt small butter dots.
  4. Drop tablespoonfuls of batter. Cook for 1-2 minutes until bubbles form.
  5. Flip and cook 1 more minute until golden.
  6. Serve warm with jam and whipped cream.
