Potato Chip Frittata

Ingredients:
2 Tbsp. extra-virgin olive oil
1/2 medium yellow onion, finely minced
8 large eggs
1/4 cup sour cream, plus extra for garnish
1 1/2 cups sour cream & onion potato chips, crushed, plus extra for garnish
2 Tbsp. freshly chopped chives, plus extra for garnish
Kosher salt
Freshly ground black pepper

Directions:
  1. Preheat & Prepare Onions: Preheat your oven to 375°F. Heat olive oil in a medium oven-safe skillet over medium heat. Add the minced onion and cook, stirring occasionally, until golden and caramelized, about 20 to 25 minutes.
  2. Mix the Egg Base: While the onion cooks, whisk together the eggs and sour cream in a large bowl. Stir in the crushed chips and chives, then let the mixture rest for 10 minutes. Season with a pinch of salt and freshly ground black pepper.
  3. Combine & Cook: Once the onions are caramelized, pour the egg mixture into the skillet. Gently stir to evenly distribute the potato chips and chives.
  4. Bake: Transfer the skillet to the oven and bake until the eggs are just set, about 10 to 12 minutes.
  5. Garnish & Serve: Let the egg bake cool for 5 minutes. Garnish with a dollop of sour cream, extra crushed chips, and a sprinkle of fresh chives before serving.
