Ingredients:
  • 1 12-pack slider rolls
  • Cooking spray
  • 1 lb ground beef
  • 1 small onion, chopped
  • Kosher salt and black pepper
  • 1 cup cubed Velveeta cheese
  • 1 10-ounce can chopped tomatoes and green chiles (such as Rotel)
  • 12 slices pickled jalapeños
  • 2 Tbsp butter, melted
Method:
  1. Cut the slider rolls in half horizontally, keeping them connected, and place the bottom half in a greased 9-by-13-inch baking dish.
  2. Cook the ground beef in a large skillet until browned, then remove from heat. Stir in the chopped onion and season with salt and pepper.
  3. In a saucepan, melt the Velveeta cheese along with the chopped tomatoes and green chiles.
  4. Evenly spread the beef mixture over the bottom half of the rolls, drizzle with the melted cheese, and top with jalapeño slices. Place the top half of the rolls over the filling, brush with melted butter, and bake at 400˚ for 15 minutes, or until golden brown and bubbling.
