Nothing says fall quite like a warm mug of pumpkin spice. Skip the coffee shop lines and make this creamy, cozy favorite right at home—it’s quicker than you think and just as delicious.

- 1 1/2 cups fat-free milk, almond milk, or dairy-free milk of choice
- 2 tablespoons pumpkin butter (store-bought works fine)
- 2 teaspoons vanilla extract
- 1/2 teaspoon pumpkin pie spice
- 2 teaspoons sugar, or substitute to taste
- 1/2 cup espresso (or 3/4 cup strong brewed coffee)
- Fat-free whipped topping
- Dash of pumpkin pie spice, for topping
Instructions:
- In a small saucepan, combine milk, pumpkin butter, and sugar (or sweetener). Simmer over medium heat, stirring often, until just boiling.
- Remove from heat and stir in vanilla and pumpkin pie spice.
- Blend with an immersion blender until frothy and smooth (or whisk well).
- Divide between two mugs, add espresso, and top with whipped cream and a sprinkle of pumpkin pie spice.
