Pumpkin Spice Latte

Nothing says fall quite like a warm mug of pumpkin spice. Skip the coffee shop lines and make this creamy, cozy favorite right at home—it’s quicker than you think and just as delicious.

Ingredients:
  • 1 1/2 cups fat-free milk, almond milk, or dairy-free milk of choice
  • 2 tablespoons pumpkin butter (store-bought works fine)
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon pumpkin pie spice
  • 2 teaspoons sugar, or substitute to taste
  • 1/2 cup espresso (or 3/4 cup strong brewed coffee)
  • Fat-free whipped topping
  • Dash of pumpkin pie spice, for topping

Instructions:
  1. In a small saucepan, combine milk, pumpkin butter, and sugar (or sweetener). Simmer over medium heat, stirring often, until just boiling.
  2. Remove from heat and stir in vanilla and pumpkin pie spice.
  3. Blend with an immersion blender until frothy and smooth (or whisk well).
  4. Divide between two mugs, add espresso, and top with whipped cream and a sprinkle of pumpkin pie spice.
