Pumpkin Spice Mousse Parfaits

Ingredients:
  • 1 cup heavy whipping cream
  • 1 (8 ounce) container whipped cream cheese
  • 1 packet Pumpkin Spice Cheese Ball Mix
  • 15 ginger snap cookies
Method:
  1. In medium bowl and using an electric mixer on high, whip heavy whipping cream until stiff peaks form. Set aside.
  2. In large bowl, combine cream cheese and Pumpkin Spice Cheese Ball Mix. Using electric mixer, beat on high until light and fluffy. Add half the whipped cream and beat until incorporated. Fold in remaining whipped cream until combined.
  3. In 6 small parfait glasses or small ramekins, break up 6 cookies into the bottom of glasses. Top with half the mousse, 6 cookies, broken up, remaining mousse and remaining 3 cookies, broken up. Makes 6 servings. Make Ahead: Prepare, assemble and refrigerate up to 1 hour ahead.
