- 1 (12 ounce) package dried rice noodles
- 1 teaspoon vegetable oil
- 1 onion, finely diced
- 3 cloves garlic, minced
- 2 cups diced cooked chicken breast meat
- 1 small head cabbage, thinly sliced
- 4 carrot, thinly sliced
- ¼ cup soy sauce
- 2 lemons - cut into wedges, for garnish
- Prepare the Ingredients
Collect all of your ingredients before you begin. - Soften the Noodles
Place the rice noodles in a large bowl and cover them with warm water. Allow them to soften for 8 to 10 minutes, then drain the water and set the noodles aside. - Sauté Aromatics and Chicken
Heat oil in a wok or large skillet over medium-low heat. Add the onion and garlic, cooking and stirring until the onion is tender (about 3-5 minutes). Then, add the chicken, cabbage, carrots, and soy sauce, cooking until the cabbage starts to soften. - Combine and Cook
Add the drained noodles to the wok. Cook while stirring constantly until the entire dish is heated through.
