Rosemary Slices

Ingredients:
½ cup butter, softened
¾ cup white sugar
1 medium egg
1 cup whole wheat flour
¾ cup all-purpose flour
1 tablespoon finely chopped fresh rosemary
½ teaspoon baking powder

Directions:
  1. Mix the Dough: In a bowl, cream together the butter and sugar until smooth and fluffy. Beat in the egg until fully incorporated. Gradually mix in the whole wheat flour, all-purpose flour, rosemary, and baking powder until a well-blended dough forms.
  2. Shape and Chill: Divide the dough in half and shape each half into a log about 1 1/4 inches in diameter. Wrap each log tightly in plastic wrap and refrigerate for at least 2 hours, or freeze for 1 hour for faster chilling.
  3. Prepare to Bake: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper for easy cleanup.
  4. Slice and Bake: Slice the chilled logs into thin rounds, about 1/8 to 1/4 inch thick. Arrange the slices on the prepared baking sheets, leaving space between each cookie. Bake for 10 to 12 minutes, or until the edges are golden brown and the cookies are set.
  5. Cool and Enjoy: Let the cookies cool on the baking sheets for 1 minute, then transfer them to wire racks to cool completely. Store in an airtight container and enjoy with your favorite cup of tea or coffee!
