Sausage Potato Supper

This Sausage Potato Supper is a cozy, one-pan meal that combines tender potatoes, smoky sausage, and crisp-tender zucchini, making dinner both simple and satisfying. It’s easy to customize with your favorite veggies and spices for a dish that feels like home every time you make it!

Ingredients:
  • 2 small red potatoes, cubed
  • 1 tablespoon butter
  • 1 small zucchini, sliced into 1/4-inch rounds
  • 1/8 teaspoon garlic salt
  • 1/2 pound smoked sausage, sliced into 1/2-inch pieces
  • 1/8 to 1/4 teaspoon black pepper
  • Grated Parmesan cheese (optional)

Directions:
  1. In a small saucepan, cover the cubed potatoes with water and bring to a boil. Reduce heat and simmer, uncovered, for 15–20 minutes or until tender. Drain and set aside.
  2. In a large skillet, melt butter over medium-high heat. Sauté zucchini with garlic salt until crisp-tender.
  3. Add sausage to the skillet and cook, stirring occasionally, until browned. Stir in the cooked potatoes and season with black pepper.
  4. Sprinkle with Parmesan cheese if desired, and serve warm.

Make It Your Own:
Feel free to toss in your favorite herbs like rosemary, thyme, or parsley for extra flavor. Want more veggies? Bell peppers, onions, or mushrooms make great additions. A dash of paprika or red pepper flakes can add a little kick, too!
