- 2 small red potatoes, cubed
- 1 tablespoon butter
- 1 small zucchini, sliced into 1/4-inch rounds
- 1/8 teaspoon garlic salt
- 1/2 pound smoked sausage, sliced into 1/2-inch pieces
- 1/8 to 1/4 teaspoon black pepper

Directions:
- In a small saucepan, cover the cubed potatoes with water and bring to a boil. Reduce heat and simmer, uncovered, for 15–20 minutes or until tender. Drain and set aside.
- In a large skillet, melt butter over medium-high heat. Sauté zucchini with garlic salt until crisp-tender.
- Add sausage to the skillet and cook, stirring occasionally, until browned. Stir in the cooked potatoes and season with black pepper.
- Sprinkle with Parmesan cheese if desired, and serve warm.
