Sautéed Brussels Sprouts with Bacon and Onions

This savory Brussels sprout dish, with crispy bacon and fragrant thyme, is a perfect side for any meal—warm, flavorful, and easy to make! A great way to enjoy a healthy vegetable with a delicious twist!

Ingredients:
2½ pounds Brussels sprouts, trimmed
4 slices bacon, cut into 1-inch pieces
1 tablespoon extra-virgin olive oil
1 large onion, diced
4 sprigs thyme or savory, plus 2 teaspoons leaves, divided
1 teaspoon salt
Freshly ground pepper, to taste
2 teaspoons lemon juice (optional)

Directions:

  1. Bring a large pot of water to a boil. If the Brussels sprouts are small, cut them in half; if larger, cut them into quarters. Cook the sprouts for 3 to 5 minutes, just until tender. Drain and set aside.
  2. In a large skillet, cook the bacon over medium heat, stirring occasionally, until browned but not crisp, about 3 to 6 minutes. Remove with a slotted spoon and place on paper towels to drain. Pour out all but 1 tablespoon of the bacon fat.
  3. Add olive oil to the skillet and heat over medium. Add the diced onion and cook, stirring frequently, until soft but not browned, about 4 minutes. Add the thyme (or savory) sprigs, salt, and pepper, and stir.
  4. Increase the heat to medium-high. Add the Brussels sprouts to the skillet and cook for about 3 minutes, tossing occasionally, until they're tender and heated through. Remove the herb sprigs.
  5. Stir in the bacon, thyme (or savory) leaves, and lemon juice (if using). Toss everything together and enjoy!
