Ingredients:
2½ pounds Brussels sprouts, trimmed
4 slices bacon, cut into 1-inch pieces
1 tablespoon extra-virgin olive oil
1 large onion, diced
4 sprigs thyme or savory, plus 2 teaspoons leaves, divided
1 teaspoon salt
Freshly ground pepper, to taste
2 teaspoons lemon juice (optional)

Ingredients:
2½ pounds Brussels sprouts, trimmed
4 slices bacon, cut into 1-inch pieces

Directions:
- Bring a large pot of water to a boil. If the Brussels sprouts are small, cut them in half; if larger, cut them into quarters. Cook the sprouts for 3 to 5 minutes, just until tender. Drain and set aside.
- In a large skillet, cook the bacon over medium heat, stirring occasionally, until browned but not crisp, about 3 to 6 minutes. Remove with a slotted spoon and place on paper towels to drain. Pour out all but 1 tablespoon of the bacon fat.
- Add olive oil to the skillet and heat over medium. Add the diced onion and cook, stirring frequently, until soft but not browned, about 4 minutes. Add the thyme (or savory) sprigs, salt, and pepper, and stir.
- Increase the heat to medium-high. Add the Brussels sprouts to the skillet and cook for about 3 minutes, tossing occasionally, until they're tender and heated through. Remove the herb sprigs.
- Stir in the bacon, thyme (or savory) leaves, and lemon juice (if using). Toss everything together and enjoy!
